NEUS rosé : Cinsault 85 %, Vermentino 15 %

The prune is short, royat. All is handmade: prune, buds removal, leaf removal, harvest.
Yield : 40hl /ha.

Optimal maturity, handpicked harvest and sorting out to avoid damages to the berries. Cold fermentation. Dregs regularly brewed. Organic vinification chart (will be certified in 2017).

6 months with thin dregs, in stainless steel tanks.

On the nose: floral freshness and vivacity. Fresh red fruit (raspberry), lecorice hints.
Mouthfeel: delicate palate, silky, well structured. Fresh strawberry and cherry aromas.

To be served with: NÉUS rosé ill perfectly match with aperitif, mixed salads, grilled fat fisches, white grilled meat, exotic cooking – coco nut milk and curry, fruit mousse, fruit tarts.

8 to 10° celsius.

To be drunk within the year.
