The prune is short , in Royat. All interventions are handmade ones: prune, buds removal, leaf removal, harvest.
Grassed in each 2 vine ranks -rare in south of France- to keep biodiversity and life in soils

VINIFICATION:
Grape varieties are separately vinified.
Everything is worked in order to preserve aromas: First, optimal maturity of the grape, hand made and handpicked harvest in 10kg boxes to avoid damages to the berries. Dregs are regularly brewed before being decanted.
The high harvest quality allows very long fermentations of grape skins – between 3 and 5 weeks- with dayly punching down of the grapes.

AGEING:
Stainless steel tank.

TASTING:
Remarquable bright ruby color. On the nose : prominant fruit aromas –specially raspberry. Mouthfeel : red fruits with shade of spicy aromas –pepper, juniper berry. Well-structured. Quaffy. Fresh. Elegant tanins.
Will match with grilled and rosted meat –beef, chicken, cheese.
