A highly complex organic red wine
Carignan 40 %, Cabernet Sauvignon 40 %, Merlot 20 %
The prune is short. All is handmade: prune, buds removal, leaf removal and harvest for our sensitive grapes varieties. Yield : 35hl /ha.
Optimal maturity, sorting to guarantee a safe harvest and limit sulfits addition.
12 to 14 months into stainless steel for 40% of the wine, and into barrels for 60% other part.
On the nose
Very complex ans Spicy nose, Sechuan pepper, then fresk black fruits.
Mouthfeel
Fresh and well rounded mouth, with very smooth tanins. Fresh and complex finish on mint and spices.
To be served with
ÉVOLUS red will perfectly match with Grilled or cooked with sauce meats (beef, lamb, fine wildfowl). Cheese : sheep’s tome.
