VINE CULTURE:
The prune is short, in Royat. All interventions are handmade ones : buds removal, leaf removal, harvest.
Grassed each 2 vine ranks to keep biodiversity and life in soils.
2d year of biologic agriculture conversion in the plots.
Yield : 40hl/ha

VINIFICATION:
Grape varieties are separately vinified.
Everything is worked in order to preserve aromas: First, optimal maturity of the grape, hand made and handpicked harvest in 10kg boxes to avoid damages to the berries. Secondly, harvest is cooled down to 4°C and macerates several hours in the press filled with carbonic ice. Very smooth and slow pressing. Then the juice is kept cold for several days to keep on extracting nice aromas before fermentation. Dregs are regularly brewed before being decanted. The Marsanne is put into barrels during the alcoholic fermentation

AGEING:
Marsanne : 6 months with thin dregs, into 2 years white wine french oak barrels for a very elegant and well integrated oak.
Vermentino : In stainless steel tanks to preserve freshness and vivacity of these grape variety aromas.

TASTING:
Nice complexity and elegance. Well structured. Fresh sensation. On its youth : white fruit aromas (banana, pear, coco nut), and some spicy touch (curry). In full maturity yellow fruit enhanced by candied citrus fruit aromas.
Will greatly match with aperif, creamy and smooth cooking, as well as simply grilled fishes, rizottos, and exotic cooking (curry, coco nut,….)

11°C. Can be kept 3 years.
