The prune is short , in Royat. All interventions are handmade ones: buds removal, leaf removal, harvest.
Grassed each 2 vine ranks to keep biodiversity and life in soils.

VINIFICATION:
Grape varieties are separately vinified.
Everything is worked in order to preserve aromas: First, optimal maturity of the grape, hand made and handpicked harvest in 10kg boxes to avoid damages to the berries. Secondly, harvest is cooled down to 4°C and macerates several hours in the press filled with carbonic ice. Very smooth and slow pressing.
Dregs are regularly brewed before being decanted.

AGEING:
With thin dregs, in stainless steel tanks to preserve freshness and vivacity of these grape variety aromas.
TASTING:
Elegant blush rosé color. On the nose : freshness and vivacity. Mouthfeel: delicate palate, silky, well structured. Fresh strawberry and cherry aromas.
Will perfectly match with aperitif, mixed salads, grilled meat, fruit mousse
IDEAL TEMPERATURE:
8°. To drink on its youth.
