VINE CULTURE:

The prune is  short,  only 8 grappes per vine. All interventions are handmade ones: prune, buds removal, leaf removal,  harvest. Grassed in each 2 vine ranks  -rare in south of France- to keep biodiversity and life in soils .

VINIFICATION :

Grape varieties are separately vinified. Optimal maturity of the grape, hand made  and handpicked harvest in 15kg boxes to avoid damages to the berries. Soft berries macerations. Dregs are brewed  twice a week t before being decanted. Stainless steel tank vinification to keep pure fruit aromas, handle temperature, and keep  health quality

AGEING : 30% in stainless steel tank, 70% in barrels all along 12-14 months

TASTING : Bright and dark color. Nose : intensive and ripe red fruit, fruitstone, blackberry, complexified with spices. Light and elegant wood and spices tinges. Mouth : very quaffy. Well rounded, full and structured attack. Rich, suave and long balance. Spicy and fruitstone final.

IDEAL TEMPERATURE: 15°
