The prune is short. All is handmade: prune, buds removal, leaf removal, harvest.
Yield : 40hl /ha.

Optimal maturity, handpicked harvest and sorting aout to avoid damages to the berries. Cold skin maceration and cold fermentation.

6 months with thin dregs, into stainless steel tanks for Vermentino, into barrels for Viognier and Grenache gris

On the nose: floral freshness and vivacity. White fruits (white peach, pear, coco nut).
Mouthfeel: Well-structured and delicate palate. Quaffy. Fresh. Elegant long finish with citrus hints.

To be served with: NÉUS white will perfectly match with aperitives. Grilled or roasted fine fisches, White meat, fresh goat cheese.
