The prune is short. All is handmade: prune, buds removal, leaf removal, harvest.
Yield : 35hl /ha.

Optimal maturity, sorting to guarantee a safe harvest and limit sulfits addition.
Cold fermentation.

15 months into stainless steel for one part of the wine, and into barrels for the other part.

On the nose: intensive and ripe yellow fruits, spicies, chamomile, verbena. A touch of nuts and honey.
Mouthfeel: fully quaffy. Well rounded, full and structured attack. Rich, suave and long balance. Very long spicy and yellow.

To be served with : ÉVOLUS white will perfectly match with white meats with cream and mushrooms, fishes with cream, mushrooms pies.
Cheeses like Stilton, Comté, Morbier, St Nectaire.
