A highly complex organic red wine
Carignan 40 %, Cabernet Sauvignon 40 %, Merlot 20 %
The prune is short. All is handmade: prune, buds removal, leaf removal and harvest for our sensitive grapes varieties. Yield : 35hl /ha.
Optimal maturity, sorting to guarantee a safe harvest and limit sulfits addition.
12 to 14 months into stainless steel for 40% of the wine, and into barrels for 60% other part.
On the nose :
Intensive and ripe red fruit, fruitstone, blackberry, complexified with spices. Light and elegant wood and spices tinges.
Very quaffy. Well rounded, full and structured attack. Rich, suave and long balance. Spicy and fruitstone final.
To be served with :
EVOLUS red will perfectly match with Grilled or cooked with sauce meats (beef, lamb, fine wildfowl).
15° – 16° celsius
To be kept 4 years after the vintage in cellar. If not, decant 2 hours before drinking.
To be drunk within 5 or 8 years after the vintage.
