A highly complex organic red wine
Carignan 40 %, Cabernet Sauvignon 40 %, Merlot 20 %
The prune is short. All is handmade: prune, buds removal, leaf removal and harvest for our sensitive grapes varieties. Yield : 35hl /ha.
Optimal maturity, sorting to guarantee a safe harvest and limit sulfits addition.
12 to 14 months into stainless steel for 40% of the wine, and into barrels for 60% other part.
On the nose :
Intensive and ripe red fruit, fruitstone, blackberry, complexified with spices.
Mouthfeel :
Deep autumnal fruit aromas with a rich liqueur chocolate sweetness on the palate undercut by a fresh grip of tannin.
To be served with :
EVOLUS red will perfectly match with Grilled or cooked with sauce meats (beef, lamb, fine wildfowl).
15° – 16° celsius
To be kept 4 years after the vintage in cellar. If not, decant 2 hours before drinking.
To be drunk within 5 or 8 years after the vintage.
