An exceptional organic white wine

Viognier 80%,  Vermentino 20%

The prune is short. All is handmade: prune, buds removal, leaf removal, harvest. Yield : 30hl /ha.

Optimal maturity, handpicked harvest and sorting out to guarantee a safe harvest, pure aromas and limit sulfits addition.

12 months of aging following fermentation, in the same barrels, with stirring of the lees every two days. The Viognier is fermented and aged in new French oak “Grandes Vosges” barrels from Dargaud and Jaeglé. The Vermentino in French oak barrels of 2 “Center France” wines from the same cooper.

On the nose

Intense aromas of apricot, pear, passion fruit, dried fruit, beeswax and spices.

Mouthfeel:

Fleshy attack, medium palate voluminous. Very long and powerful finish on candied fruits and sweet spices integrating a nice freshness.

Food and wine pairings:

ALTIS goes wonderfully with creamed fish and scallops, creamed poultry, soft and pressed cheeses.

To be served at 15 – 16° celsius.
To be forgot into cellar within 5 years after the vintage. If not, to be absolutely decanted 12 hours before the meal.

To be drunk within 5 or 7 years after the vintage.
